Keto Recipe – Vegetarian Taco Stuffed Avocados

Vegetarian tacos often mean substituting ground beef, or chicken, for loads of highly processed vegetarian “meat” items which can also be very expensive. Other alternatives for vegetarians might include heaping scoops of beans or rice which are also not part of the ketogenic way of life. My solution? An old school vegetarian meat substitute that can be seasoned to impersonate multiple different recipes: walnut meat!

Ingredients:
For the Filling
7 ounces cauliflower
1 cup raw walnuts
1 tablespoon hulled hemp seeds
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon onion powder
2 teaspoons smoked paprika
2 teaspoon adobo sauce
4 tablespoon avocado oil, divided
2 tablespoon shredded cheddar cheese
1 teaspoon salt

For the Avocado Boats
1/2 cup taco filling
1/2 medium avocado
1 tablespoon sour cream
1 tablespoon shredded cheddar cheese
